Ingredients
  

  • 4 medium ripe tomatoes diced
  • 1 small red onion roughly chopped
  • 1 unit green or red chili deseeded and chopped (adjust to taste)
  • 2 tablespoons white vinegar or lemon juice
  • 1 teaspoon sugar optional
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons fresh coriander chopped (optional)

Instructions
 

  • 1. Wash and dice the ripe tomatoes. Roughly chop the red onion and chili.
  • 2. Place the diced tomatoes, chopped red onion, chili, white vinegar (or lemon juice), sugar (if using), salt, and black pepper into a food processor.
  • 3. Pulse the ingredients a few times until you reach your desired salsa consistency – some prefer it chunky, others smoother. Be careful not to over-process.
  • 4. Taste and adjust seasoning as needed. If using, stir in fresh coriander.
  • 5. Serve immediately as a fresh condiment or side dish with your favorite South African meals, grilled meats, or pap.
