Ingredients
  

  • 2 tablespoons olive oil
  • 4 ounces chicken breasts boneless
  • 0.5 cup gluten-free breadcrumbs
  • 0.25 cup Parmesan cheese grated
  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon salt
  • 0.125 teaspoon black pepper
  • 1 large egg beaten
  • 1.5 cups marinara sauce your favorite brand
  • 4 ounces mozzarella cheese sliced or shredded
  • 2 tablespoons fresh parsley chopped (for garnish)

Instructions
 

  • In a shallow dish, combine gluten-free breadcrumbs, grated Parmesan cheese, garlic powder, salt, and pepper. In another shallow dish, whisk the egg.
  • Dip each chicken breast into the beaten egg, then dredge in the breadcrumb mixture, ensuring it's fully coated. Press gently to adhere.
  • Heat olive oil in a large oven-safe skillet over medium-high heat. Add the breaded chicken breasts and cook for 3-4 minutes per side, until golden brown. The chicken does not need to be cooked through at this stage.
  • Pour the marinara sauce over and around the chicken breasts in the skillet. Top each chicken breast with mozzarella cheese.
  • Reduce heat to low, cover the skillet, and simmer for 10-12 minutes, or until the chicken is cooked through and the cheese is melted and bubbly. Alternatively, if your skillet is oven-safe, you can bake it at 375°F (190°C) for 10-15 minutes.
  • Garnish with fresh chopped parsley before serving hot.

Notes

For extra flavor, add fresh basil leaves to the sauce. Serve with zucchini noodles or your favorite gluten-free pasta for a complete meal. You can also experiment with different cheeses like provolone for a varied taste.
