Ingredients
  

  • 4 medium cod fillets (about 6 oz each)
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 0.5 tsp dried oregano
  • 0.5 tsp dried thyme
  • 0.25 tsp salt
  • 0.125 tsp black pepper
  • 1 large lemon (half sliced
  • 2 tbsp fresh parsley chopped (for garnish)

Instructions
 

  • Preheat oven to 400°F (200°C). Lightly grease a baking dish or line with parchment paper.
  • Pat cod fillets dry with paper towels. Arrange them in the prepared baking dish.
  • In a small bowl, whisk together olive oil, garlic powder, oregano, thyme, salt, and pepper.
  • Squeeze half of the lemon juice over the cod fillets.
  • Brush the olive oil-herb mixture evenly over each cod fillet. Place lemon slices on top of each fillet.
  • Bake for 12-15 minutes, or until the fish is opaque and flakes easily with a fork. Cooking time will vary depending on the thickness of the fillets.
  • Garnish with fresh chopped parsley and serve immediately.

Notes

Serve with roasted asparagus, a side salad, or rice for a complete meal. This recipe works well with any firm white fish like tilapia, snapper, or halibut. For extra flavor, let the seasoned fish sit for 10-15 minutes before baking. Ensure fish is patted dry for best results.
