Ingredients

  • 0.25 cup soybean paste (doenjang)
  • 0.25 cup gochujang Korean chili paste
  • 3 cloves garlic minced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil toasted
  • 2 tablespoons honey or brown sugar
  • 0.5 teaspoon black pepper freshly ground

Instructions

  • In a medium bowl, combine the soybean paste, gochujang, minced garlic, soy sauce, sesame oil, honey, and black pepper.
  • Whisk all the ingredients together thoroughly until a smooth, well-combined paste forms. Ensure there are no lumps of paste remaining.
  • Taste the marinade and adjust seasoning if necessary. You might add more honey for sweetness or a touch more gochujang for extra spice.
  • Use immediately to marinate your desired protein or vegetables. For optimal flavor, allow items to marinate for at least 2 hours, or ideally overnight in the refrigerator. Cover tightly while marinating.

Notes

This marinade is incredibly versatile. Use it for beef, pork, chicken, or even firm tofu and mushrooms. For best results, marinate meats for at least 2 hours, or preferably overnight in the refrigerator. Leftover marinade can be stored in an airtight container in the fridge for up to 5-7 days. Adjust the amount of gochujang for more or less spice, and honey for desired sweetness.
