Ingredients

  • 4 cups water
  • 1 tbsp dashi powder or dashi granules
  • 4 ounces silken tofu cut into 1/2-inch cubes
  • 2 tbsp dried wakame seaweed rehydrated
  • 2 tbsp miso paste white or red
  • 2 green onions thinly sliced

Instructions

  • Bring 4 cups of water to a boil in a medium saucepan.
  • Once boiling, reduce heat to medium. Add the dashi powder and stir until dissolved.
  • Gently add the cubed tofu and rehydrated wakame seaweed to the dashi broth. Simmer for 2-3 minutes.
  • Remove the saucepan from the heat. Place a fine-mesh strainer over the pot and add the miso paste into the strainer.
  • Using a spoon or chopsticks, gently push the miso paste through the strainer into the broth, ensuring it dissolves completely without clumping. Do not boil the soup after adding miso, as it can diminish the paste's flavor and beneficial probiotics.
  • Ladle the hot miso soup into bowls and garnish with thinly sliced green onions if desired. Serve immediately.

Notes

For extra flavor, try adding sliced mushrooms or spinach. Adjust miso paste to your taste, adding more for a stronger flavor. Serve immediately.
