Ingredients

  • 2 racks pork spare ribs about 2-3 pounds each
  • 2 tbsp brown sugar
  • 1 tbsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 tsp cayenne pepper
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 cup ketchup
  • 0.5 cup apple cider vinegar
  • 0.25 cup brown sugar packed
  • 2 tbsp Worcestershire sauce
  • 1 tbsp Dijon mustard

Instructions

  • Preheat oven to 300°F (150°C). Remove membrane from the back of the ribs.
  • In a small bowl, combine 2 tbsp brown sugar, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Rub mixture generously over both sides of the ribs.
  • Place ribs on a large baking sheet lined with foil, meaty side up. Cover tightly with another layer of foil.
  • Bake for 2.5 to 3 hours, or until ribs are tender.
  • While ribs are baking, prepare the glaze: In a saucepan, combine ketchup, apple cider vinegar, 1/4 cup brown sugar, Worcestershire sauce, and Dijon mustard. Bring to a simmer over medium heat, then reduce heat and cook for 10-15 minutes, stirring occasionally, until slightly thickened. Reserve half of the glaze.
  • Remove ribs from oven, uncover, and increase oven temperature to 375°F (190°C).
  • Brush ribs generously with half of the prepared glaze.
  • Place the ribs in the oven and allow to bake for 20-25 minutes, then brush with the remaining glaze every 10 minutes, turning the ribs over so they caramelize on all sides.
  • Remove from oven, let rest for 5-10 minutes, then slice and serve.

Notes

For extra tender ribs, consider boiling or steaming them for an hour before applying the rub and initial bake. You can customize the glaze with a dash of hot sauce for a spicy kick or a splash of liquid smoke for a smoky flavor. Serve with coleslaw, cornbread, or roasted vegetables.
