Ingredients
  

  • 1.5 lb large shrimp peeled and deveined
  • 2 cups broccoli florets
  • 1 cup bell pepper sliced (any color)
  • 1 cup red onion sliced
  • 2 Tbsp olive oil
  • 4 cloves garlic minced
  • 1 tsp dried Italian seasoning
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 2 Tbsp fresh parsley chopped

Instructions
 

  • Preheat your grill to medium-high heat (about 400°F/200°C) or preheat oven to 400°F (200°C).
  • In a large bowl, combine the shrimp, broccoli florets, bell pepper, and red onion.
  • Drizzle with olive oil, minced garlic, Italian seasoning, salt, and pepper. Toss gently to ensure everything is evenly coated.
  • Tear off four large pieces of heavy-duty aluminum foil. Divide the shrimp and vegetable mixture evenly among the foil pieces.
  • Bring the long sides of the foil together and fold them down several times to create a tight seal. Then, fold in the short ends to completely seal each packet, ensuring no steam can escape.
  • Place the foil packets directly on the preheated grill or on a baking sheet in the oven.
  • Cook for 12-15 minutes, or until the shrimp are pink and fully cooked and the vegetables are tender-crisp.
  • Carefully open the packets (watch out for steam!) and garnish with fresh parsley and a squeeze of fresh lemon juice before serving.

Notes

For easier cleanup and to prevent sticking, you can line the foil with a piece of parchment paper. Feel free to swap vegetables like asparagus, cherry tomatoes, or zucchini. Chicken or firm fish can be used instead of shrimp, adjusting cook time as needed. Serve with rice, quinoa, or a fresh side salad.
