Ingredients
  

  • 1 cup brown rice cooked
  • 1 can black beans rinsed and drained
  • 1 cup corn frozen
  • 8 ounces chicken breast cooked and shredded or diced
  • 0.5 cup salsa homemade or store-bought (for freezing or serving fresh)
  • 1 tablespoon olive oil for cooking chicken
  • 1 teaspoon chili powder for seasoning chicken
  • 0.5 teaspoon cumin for seasoning chicken
  • Salt and pepper to taste
  • 0.25 cup shredded cheddar cheese optional
  • 0.5 each avocado optional
  • 1 wedge lime optional

Instructions
 

  • Cook brown rice according to package directions. Set aside to cool completely.
  • Heat olive oil in a skillet over medium heat. Add chicken breast, chili powder, cumin, salt, and pepper. Cook until chicken is no longer pink and cooked through. Shred or dice. Set aside to cool completely.
  • Drain and rinse black beans. If using frozen corn, thaw it slightly or briefly warm it.
  • Once all components (rice, chicken, beans, corn) are cooled, portion them into individual freezer-safe containers. If freezing salsa with the bowl, add it now. Alternatively, you can add fresh salsa later after reheating.
  • Seal containers tightly and freeze for up to 3 months.
  • To reheat, remove the lid (or vent if microwave-safe) and microwave for 3-5 minutes, stirring halfway, until heated through. Alternatively, empty contents into a saucepan and heat over medium heat until warm.
  • Serve with fresh toppings like avocado slices, a squeeze of lime, shredded cheese, or a dollop of sour cream, if desired.

Notes

Use airtight, freezer-safe containers for best results. Keep fresh toppings like avocado, sour cream, or extra salsa separate to add after reheating. Experiment with different proteins like ground beef, turkey, or seasoned tofu.
