Ingredients
  

  • 500 g firm white fish fillets (e.g. tilapia
  • 0.5 cup soy sauce
  • 0.25 cup cane or apple cider vinegar
  • 4-6 cloves garlic minced
  • 1 tsp whole black peppercorns
  • 2 pcs bay leaves
  • 0.5 cup water or fish broth
  • 1 tbsp cooking oil
  • 1 medium onion sliced (optional)
  • 1 pc green or red chili sliced (optional

Instructions
 

  • Rinse fish fillets and pat dry. In a bowl, combine soy sauce, vinegar, minced garlic, whole black peppercorns, and bay leaves. Add the fish fillets to the marinade, ensuring they are well coated. Marinate for 20-30 minutes in the refrigerator. In a large pan or pot, heat cooking oil over medium heat. If using, sauté sliced onions until translucent. Carefully add the marinated fish fillets to the pan. Pour the remaining marinade over the fish. Add water or fish broth. Bring the mixture to a simmer, then reduce heat to low, cover, and cook for 10-15 minutes, or until the fish is cooked through and flakes easily with a fork. If using chili, add it during the last 5 minutes of cooking. Taste and adjust seasoning if needed (add more soy sauce for saltiness, vinegar for tang). Serve immediately with hot steamed white rice.

Notes

For best results, use firm white fish fillets like tilapia, cod, or mahi-mahi. Adjust the amount of vinegar and soy sauce to your preference. Some variations include a touch of sugar to balance the tanginess. Serve hot with steamed white rice.
