Ingredients
  

  • 1 kg boneless skinless chicken thighs
  • 2 medium sweet potatoes peeled and diced into 1-inch cubes
  • 1 pound Brussels sprouts halved
  • 1 medium red onion cut into wedges
  • 1 medium red apple cored and cut into wedges
  • 2 tablespoons olive oil
  • 1 teaspoon dried rosemary
  • 0.5 teaspoon dried thyme
  • 0.5 teaspoon paprika
  • 0.25 teaspoon garlic powder
  • fresh parsley for garnish chopped

Instructions
 

  • Preheat oven to 400°F (200°C). Line a large sheet pan with parchment paper for easy cleanup.
  • In a large bowl, combine the diced sweet potatoes, halved Brussels sprouts, red onion wedges, and apple wedges. Drizzle with 1 tablespoon of olive oil, then sprinkle with half of the rosemary, thyme, paprika, garlic powder, salt, and pepper. Toss to coat evenly.
  • Add the chicken thighs to the same bowl (or a separate one if you prefer). Drizzle with the remaining 1 tablespoon of olive oil and season with the remaining rosemary, thyme, paprika, garlic powder, salt, and pepper. Toss to coat.
  • Spread the seasoned vegetables and chicken in a single layer on the prepared sheet pan, ensuring not to overcrowd it. If necessary, use two sheet pans.
  • Roast for 25-30 minutes, or until the chicken is cooked through (internal temperature of 165°F/74°C) and the vegetables are tender and slightly caramelized. Flip ingredients halfway through cooking for even browning.
  • Garnish with fresh chopped parsley before serving. Serve hot and enjoy your easy, delicious fall dinner!

Notes

For extra crispiness, ensure vegetables are not overcrowded on the sheet pan. You can easily swap chicken thighs for breasts (adjusting cook time) or add other fall veggies like butternut squash. A drizzle of balsamic glaze after roasting adds a wonderful tang.
