Ingredients
  

  • 1 tablespoon olive oil
  • 12 ounce ground chorizo sausage casings removed
  • 1 medium yellow onion chopped
  • 2 cloves garlic minced
  • 1 medium red bell pepper diced
  • 1 medium yellow bell pepper diced
  • 15 ounce crushed tomatoes canned
  • 0.5 cup chicken or vegetable broth
  • 16 ounce potato gnocchi fresh or shelf-stable
  • 1 cup frozen corn kernels thawed
  • 0.5 teaspoon dried oregano
  • 0.25 teaspoon black pepper or to taste
  • salt to taste
  • 2 tablespoons fresh parsley chopped
  • Parmesan cheese grated

Instructions
 

  • Heat olive oil in a large skillet over medium-high heat. Add the ground chorizo and cook, breaking it up with a spoon, until browned and cooked through. Remove the chorizo with a slotted spoon and set aside, leaving about 1 tablespoon of fat in the skillet.
  • Add the chopped onion and diced bell peppers to the skillet and cook for 5-7 minutes, until softened. Stir in the minced garlic and cook for another minute until fragrant.
  • Pour in the crushed tomatoes and broth. Stir in the dried oregano, black pepper, and salt to taste. Bring the mixture to a gentle simmer.
  • Add the gnocchi and the cooked chorizo back to the skillet. Stir gently to combine. Cover the skillet and let it simmer for 5-7 minutes, or until the gnocchi are tender and cooked through, stirring occasionally to prevent sticking.
  • Stir in the thawed corn kernels and cook for 2-3 minutes more, until heated through.
  • Taste and adjust seasonings as needed. Serve hot, garnished with fresh parsley and grated Parmesan cheese, if desired.

Notes

For a vegetarian option, swap chorizo for plant-based sausage and add smoked paprika for depth. Feel free to add other vegetables like spinach or zucchini. A sprinkle of red pepper flakes can boost the heat if desired. Serve with crusty bread to soak up the delicious sauce.
