Ingredients
  

  • 2 medium potatoes peeled and diced into 1-inch cubes
  • 1/2 cup cheese sauce mix e.g.
  • 1/4 cup milk or water
  • 1 tbsp butter optional
  • pinch salt to taste
  • pinch black pepper to taste
  • 2 tbsp green onions chopped

Instructions
 

  • Wash and peel potatoes, then dice them into uniform 1-inch cubes.
  • Place diced potatoes in a microwave-safe bowl. Add 1 tablespoon of water, cover loosely with a lid or microwave-safe plastic wrap, and microwave on high for 5-7 minutes, or until tender.
  • Carefully remove potatoes from the microwave. Drain any excess water.
  • In a separate small bowl, prepare the cheese sauce according to package directions, typically mixing the powder with milk or water until smooth.
  • Spread the prepared cheesy sauce evenly over the tender potatoes in the microwave-safe bowl. Do not mix for best results, allowing the sauce to form a rich, melted layer.
  • Place the bowl back into the microwave and microwave on high for another 1-2 minutes, or until the cheese is bubbling and fully melted.
  • Carefully remove, let cool slightly, then garnish with chopped green onions if desired. Serve immediately.

Notes

For extra flavor, try adding cooked bacon bits or chopped chives after microwaving. You can also experiment with different cheese sauces or sprinkle shredded cheddar cheese on top for a varied cheesy experience. While this recipe is microwave-focused for speed, you can finish it under a broiler for a crispy cheese topping.
