Ingredients
  

  • 1 lb boneless chicken or beef cut into 1-inch cubes
  • 2 tbsp olive oil
  • 1 lemon juiced
  • 2 cloves garlic minced
  • 1 tsp paprika
  • 0.5 tsp cumin
  • 0.5 tsp dried oregano
  • 0.25 tsp black pepper
  • 1 tsp salt
  • 1 medium onion cut into wedges
  • 1 medium bell pepper any color
  • 8 units wooden or metal skewers

Instructions
 

  • In a large bowl, combine olive oil, lemon juice, minced garlic, paprika, cumin, oregano, salt, and black pepper. Add the meat cubes and toss to coat evenly. Cover the bowl and refrigerate for at least 2 hours, preferably 4-6 hours, or overnight.
  • Preheat your grill to medium-high heat (about 375-400°F or 190-200°C).
  • Thread the marinated meat, onion wedges, and bell pepper pieces alternately onto the skewers. Don't pack them too tightly.
  • Place the kebabs on the preheated grill. Cook for 10-15 minutes, turning occasionally, until the meat is cooked through and lightly charred on all sides. Cooking time will vary based on meat type and thickness.
  • Remove from grill and let rest for a few minutes before serving.

Notes

For best results, marinate meat for at least 4 hours or overnight. You can substitute chicken with beef or lamb. Serve with rice, fresh salad, or pita bread and a yogurt sauce. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
