Crispy Sweet Chili Pork Belly Bites

A quick and flavorful dish featuring succulent pork belly, caramelized with a glaze of dark soy sauce, sweet chili, and sesame seeds, with a hint of fresh green chili.

Ingredients
  

  • 500 g Pork belly skinless
  • 1 tbsp Vegetable oil for cooking
  • 2 cloves Garlic minced
  • 1 inch Fresh ginger grated
  • 2 tbsp Dark soy sauce
  • 2 tbsp Sweet chilli sauce
  • 1 tsp Sesame oil
  • 1 tbsp Honey or brown sugar optional
  • 1 tsp Sesame seeds for garnish
  • 1 small Green chilli sliced
  • 2 stalks Spring onions chopped

Instructions
 

  • Cut the pork belly slices into bite-sized pieces. Pat them dry with paper towels to help with crisping.
  • Heat vegetable oil in a large pan or wok over medium-high heat. Add the pork belly pieces and cook, stirring occasionally, until browned and crispy, about 10-15 minutes. Drain off most of the rendered fat, leaving about 1-2 tablespoons in the pan.
  • Add minced garlic and grated ginger to the pan and stir-fry for 1 minute until fragrant.
  • In a small bowl, whisk together dark soy sauce, sweet chilli sauce, sesame oil, and honey (if using).
  • Pour the sauce over the pork belly in the pan. Stir well to coat all pieces, cooking for another 2-3 minutes until the sauce thickens and glazes the pork.
  • Remove from heat. Garnish generously with sesame seeds, sliced green chili, and chopped spring onions. Serve immediately.

Notes

For extra crispy pork belly, pat it very dry before cooking. You can also roast the pork belly in the oven first to render the fat, then finish in a pan with the sauce. Serve with steamed rice or noodles and your favorite stir-fried vegetables.
