Ingredients
  

  • 10 oz fresh spinach
  • 4 oz feta cheese
  • 2 cloves garlic
  • 1/4 cup fresh dill
  • 1/4 cup fresh parsley
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes
  • 8 sheets phyllo dough

Instructions
 

  • Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  • In a large bowl, combine chopped spinach, crumbled feta, minced garlic, fresh dill, fresh parsley, 2 tablespoons of olive oil, dried oregano, red pepper flakes (if using), salt, and pepper. Mix well until everything is evenly combined.
  • Lay one sheet of phyllo dough on a clean surface. Lightly brush with olive oil or cooking spray. Place a second sheet on top and brush again. Repeat until you have two stacks of 4 phyllo sheets.
  • Spread a thin layer of the spinach and feta mixture evenly over each phyllo stack, leaving a small border on the long edges.
  • Roll each phyllo stack tightly from one long end to the other to form a log. Gently press to seal the ends.
  • Cut each log into 1-inch thick "chips" or pinwheels. Arrange them on the prepared baking sheet.
  • Bake for 18-22 minutes, or until golden brown and crispy.

Notes

Use fresh spinach for best results. Adjust red pepper flakes for desired spice. Serve with a dollop of Greek yogurt or tzatziki for an extra creamy touch. Phyllo dough dries out quickly, so keep unused sheets covered with a damp cloth.
