Ingredients
  

  • 2 lb chicken wings pat dried
  • 1 tbsp baking powder not baking soda
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 4 tbsp unsalted butter melted
  • 4 cloves garlic minced
  • 0.25 cup grated Parmesan cheese plus more for garnish
  • 2 tbsp fresh parsley chopped

Instructions
 

  • Preheat oven to 400°F (200°C). Line a baking sheet with foil and place a wire rack on top. Lightly spray the rack with non-stick spray.
  • In a large bowl, combine the dried chicken wings with baking powder, salt, and black pepper. Toss until wings are evenly coated.
  • Arrange the seasoned wings in a single layer on the prepared wire rack, ensuring no pieces are touching.
  • Bake for 40-45 minutes, flipping halfway through, or until the wings are golden brown and crispy. Internal temperature should reach 165°F (74°C).
  • While wings are baking, prepare the sauce: In a small saucepan, melt the butter over medium heat. Add minced garlic and sauté for 1 minute until fragrant, being careful not to burn. Remove from heat.
  • Transfer the hot crispy wings to a large bowl. Pour the garlic butter mixture over the wings, add the grated Parmesan cheese, and toss gently until all wings are evenly coated.
  • Garnish with fresh chopped parsley and a sprinkle of extra Parmesan cheese. Serve immediately.

Notes

For extra crispiness, pat wings very dry before seasoning. For a spicier kick, add a pinch of red pepper flakes to the sauce. Serve with ranch or blue cheese dressing and celery sticks.
