Ingredients
  

  • 2 lb chicken wings pat dried
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • Optional 1 tsp baking powder

Instructions
 

  • Preheat oven to 180°C (350°F) or air fryer to 180°C (350°F). Line a baking sheet with parchment paper for oven baking, or prepare your air fryer basket.
  • Pat the chicken wings thoroughly dry with paper towels. This is crucial for crispy skin.
  • In a large bowl, toss the dried wings with olive oil, garlic powder, paprika, salt, and black pepper. If using, add the baking powder and toss well to coat evenly.
  • Arrange the seasoned wings in a single layer on the prepared baking sheet or in the air fryer basket, ensuring they are not overcrowded. Work in batches if necessary.
  • Bake in the preheated oven for 20-25 minutes, then flip the wings and bake for another 20-25 minutes, or until golden brown and crispy. If using an air fryer, cook for 25-30 minutes, shaking the basket halfway through. The internal temperature should reach 74°C (165°F).
  • Remove from oven or air fryer, let rest for a few minutes, then serve immediately with your favorite dipping sauces.

Notes

For extra crispiness, ensure wings are completely dry before seasoning. A tiny pinch of aluminum-free baking powder (not baking soda!) mixed with your seasoning can also help render fat and create a crispier skin. Serve immediately with your favorite dipping sauces like ranch, blue cheese, or a spicy buffalo sauce.
