Ingredients
  

  • 3 cup cooked chicken shredded or diced
  • 1 cup mayonnaise full-fat preferred
  • 2 tablespoon mango chutney finely chopped
  • 1 tablespoon curry powder mild
  • 1 tablespoon lemon juice freshly squeezed
  • 1/4 cup dried apricots chopped
  • 1/4 cup slivered almonds toasted (optional)
  • 2 tablespoon fresh cilantro chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper freshly ground

Instructions
 

  • If not already cooked, cook chicken breasts or thighs until tender, then shred or dice. Allow to cool completely.
  • In a large bowl, combine the mayonnaise, mango chutney, curry powder, and lemon juice. Mix until well combined and smooth.
  • Add the shredded or diced chicken, chopped dried apricots, and toasted slivered almonds (if using) to the dressing.
  • Gently fold all the ingredients together until the chicken is thoroughly coated in the creamy dressing.
  • Season with salt and freshly ground black pepper to taste. Adjust curry powder or chutney if desired.
  • Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld and chill. Serve cold.

Notes

For best results, use freshly cooked and shredded chicken. This dish tastes even better if allowed to chill for at least an hour before serving, allowing the flavors to meld. You can vary the dried fruit with sultanas or cranberries, and nuts with cashews. Serve in sandwiches, with a green salad, or as a topping for jacket potatoes.
