Ingredients
  

  • 4 medium ripe tomatoes cut into wedges
  • 1 large cucumber peeled (optional) and sliced
  • 1/2 red onion thinly sliced
  • 1/2 cup Kalamata olives pitted (optional)
  • 200 g feta cheese block
  • 1/4 cup extra virgin olive oil
  • 1 tablespoon red wine vinegar (optional
  • 1 teaspoon dried oregano
  • to taste salt
  • to taste black pepper freshly ground

Instructions
 

  • In a large bowl, combine the tomato wedges, sliced cucumber, and thinly sliced red onion.
  • Add the Kalamata olives to the bowl.
  • Place the block or crumbled feta cheese on top of the vegetables.
  • Drizzle generously with extra virgin olive oil. If using, add the red wine vinegar.
  • Sprinkle with dried oregano, then season with salt and freshly ground black pepper to taste.
  • Gently toss the ingredients to combine, ensuring the feta doesn't completely crumble if you prefer larger pieces.
  • Serve immediately as a refreshing side dish or a light main course.

Notes

For the best flavor, use ripe, seasonal vegetables. Don't add lettuce; traditional Greek salad does not include it. Serve immediately or let it sit for 15-30 minutes for flavors to meld. A good quality extra virgin olive oil is crucial.
