Ingredients
  

  • 1 kg Beef bones marrow bones
  • 500 grams Beef sirloin thinly sliced
  • 400 grams Rice noodles dried
  • 1 large Onion
  • 1 piece Ginger 4-inch

Instructions
 

  • Simmer beef bones with charred ginger and onion for at least 6 hours.
  • Strain the broth to ensure it is clear.
  • Briefly blanch rice noodles and thinly slice raw beef.
  • Place noodles and beef in a bowl, pour the boiling broth over to cook the beef, and top with fresh herbs like cilantro, basil, and mint.

Notes

Parboiling the bones first and skimming the scum is key to a clear broth.
