Chicha Morada: Peruvian Super Drink

A traditional Peruvian non-alcoholic beverage made from purple corn, fruits, and spices, renowned for its vibrant color and refreshing, sweet flavor.

Ingredients
  

  • 1 lb purple corn kernels and cob
  • 3 liter water
  • 1 whole pineapple peel and core
  • 2 medium green apples quartered
  • 1 stick cinnamon
  • 6 whole cloves
  • 1 cup sugar or to taste
  • 4-5 limes juiced

Instructions
 

  • Place rinsed purple corn, water, pineapple peel and core, green apples, cinnamon stick, and whole cloves in a large pot.
  • Bring to a boil, then reduce heat and simmer for 45-60 minutes, or until the corn is soft and the liquid is a deep purple.
  • Carefully strain the mixture through a fine-mesh sieve into a clean pitcher or large bowl, discarding the solids. Let it cool completely.
  • Once cooled, stir in the sugar until dissolved.
  • Add the fresh lime juice to taste.
  • Chill Chicha Morada thoroughly before serving. Serve over ice, optionally garnished with a slice of apple or pineapple.

Notes

For an extra fruity kick, you can add a quarter cup of chopped fresh pineapple or apple to each glass before serving. Adjust sugar and lime juice to your preference. This drink is best served very cold. Store leftovers in the refrigerator for up to 3-4 days.
