Ingredients
  

  • 4 thighs chicken bone-in
  • 1 tbsp olive oil
  • 1 medium onion sliced
  • 2 cloves garlic minced
  • 0.5 cup chicken broth
  • 14.5 oz diced tomatoes undrained
  • 0.5 cup Kalamata olives pitted and halved
  • 0.25 cup sun-dried tomatoes packed in oil
  • 1 tsp dried oregano
  • 0.5 tsp dried thyme
  • 0.25 tsp red pepper flakes optional
  • salt to taste
  • black pepper freshly ground
  • 2 tbsp fresh parsley chopped

Instructions
 

  • Pat the chicken thighs dry with paper towels and season generously with salt and black pepper.
  • Heat olive oil in a large Dutch oven or oven-safe pot over medium-high heat. Add chicken thighs, skin-side down, and sear for 5-7 minutes until golden brown and crispy. Flip and sear for another 3-4 minutes. Remove chicken from the pot and set aside.
  • Reduce heat to medium, add sliced onion to the pot, and cook for 5-7 minutes until softened and translucent.
  • Add minced garlic and cook for 1 minute until fragrant.
  • Pour in chicken broth, scraping up any browned bits from the bottom of the pot. Stir in diced tomatoes, Kalamata olives, sun-dried tomatoes, oregano, thyme, and red pepper flakes (if using). Bring to a simmer.
  • Return the seared chicken thighs to the pot, nestling them into the sauce. Ensure chicken is partially submerged.
  • Cover the pot and braise in a preheated oven at 375°F (190°C) for 30-35 minutes, or until chicken is cooked through and tender. Alternatively, simmer on the stovetop over low heat, covered, for the same duration.
  • Uncover and continue cooking for an additional 10 minutes to allow the sauce to thicken slightly.
  • Taste and adjust seasoning as needed. Garnish with fresh chopped parsley before serving.

Notes

Serve this flavorful chicken with couscous, polenta, or crusty bread to soak up the delicious sauce. For an extra pop of flavor, stir in some fresh lemon zest before serving. You can also add artichoke hearts or bell peppers for more vegetables or a splash of red wine during the braising process for added depth.
