A refreshing, vibrant blue herbal tea from Thailand, traditionally known as nam dok anchan, made with dried butterfly pea flowers and aromatic lemongrass, offering a delightful color transformation with a squeeze of citrus.

Ingredients
  

  • 1 tbsp dried butterfly pea flowers
  • 1 stalk lemongrass lightly bruised and chopped
  • 2 cups water filtered
  • 1-2 tsp honey or sugar optional
  • 1/2 lemon or lime for serving (optional)

Instructions
 

  • Bring 2 cups of filtered water to a boil in a small pot.
  • Add the dried butterfly pea flowers and the bruised lemongrass stalk to the boiling water.
  • Reduce heat to low and let it simmer for 3-5 minutes, or until the water turns a deep blue color.
  • Remove from heat and strain the tea into cups, discarding the flowers and lemongrass.
  • Stir in honey or sugar to taste, if desired.
  • Serve hot, or let it cool and serve over ice. For the magical color change, squeeze a wedge of fresh lemon or lime into the tea just before serving and watch it transform from blue to purple or pink.

Notes

For a sweeter drink, add honey, sugar, or a natural sweetener to taste. Serve hot for a soothing experience or chilled over ice for a refreshing treat. Experiment with slices of ginger or mint for added flavor. The more lemon or lime juice you add, the more dramatic the color change will be.
