Ingredients
  

  • 1 tablespoon dried butterfly pea flowers
  • 8 ounces hot water just off the boil
  • 1 teaspoon honey or sweetener of choice optional
  • 1 slice lemon or lime optional

Instructions
 

  • Boil 8 ounces of fresh water and let it cool slightly for a minute. Too hot water can sometimes degrade the delicate compounds.
  • Place 1 tablespoon of dried butterfly pea flowers in a mug or heatproof glass.
  • Pour the hot water over the flowers and let them steep for 3-5 minutes, or until the desired blue color is achieved.
  • Strain the tea to remove the flowers. If desired, sweeten with honey or your preferred sweetener and add a slice of lemon or lime for a color-changing effect. Serve immediately.

Notes

For a fun color change, squeeze a few drops of lemon or lime juice into the tea – watch it turn from blue to purple! Serve hot or iced. You can sweeten it with honey, maple syrup, or stevia, and add a slice of ginger or a sprig of mint for extra flavor.
