  • 1 tbsp Sesame oil toasted
  • 1 tbsp Rice vinegar
  • 1 tbsp Peanut butter creamy
  • 1 tsp Honey or Maple syrup
  • 1 tsp Fresh ginger grated
  • 1 clove Garlic minced
  • 1 tsp Chili garlic sauce or to taste
  • 0.5 cup Cucumber julienned
  • 0.5 cup Carrots julienned
  • 0.25 cup Green onions sliced
  • 1 tbsp Sesame seeds for garnish

Instructions
 

  • In a large bowl, whisk together soy sauce, sesame oil, rice vinegar, peanut butter, honey, grated ginger, minced garlic, and chili garlic sauce until smooth and well combined.
  • Add the cooked and drained noodles to the sauce, tossing gently until every strand is evenly coated.
  • Stir in the julienned cucumber and carrots, ensuring they are well distributed throughout the noodles.
  • Divide the noodle mixture evenly into individual serving bowls.
  • Garnish generously with sliced green onions and sesame seeds before serving. Enjoy immediately.
