Baron Green Seasoning: Island Flavor Secret

Ingredients
- 1 bunch scallions roughly chopped
- 1 medium onion roughly chopped
- 6 cloves garlic peeled
- 2 inch fresh ginger peeled and sliced
- 1 scotch bonnet pepper stem and seeds removed (optional for heat)
- 0.5 cup fresh thyme leaves
- 0.5 cup fresh parsley stems removed
- 0.25 cup white vinegar
- 1 tablespoon pimento berries (allspice)
- 1 teaspoon black pepper
- 0.5 teaspoon salt or to taste
Instructions
- Combine all ingredients (scallions, onion, garlic, ginger, Scotch bonnet pepper, thyme, parsley, white vinegar, pimento berries, black pepper, and salt) in a food processor or blender.
- Process until all ingredients are finely chopped and combined into a smooth or slightly chunky paste, depending on your preference. Add a tablespoon or two of water if needed to aid blending, but avoid making it too thin.
- Transfer the freshly made green seasoning to a clean, airtight jar or container.
- Store in the refrigerator for up to two weeks, or freeze portions in ice cube trays for longer storage (up to 3 months).
- To use as a marinade, take a generous amount of the seasoning and rub it thoroughly onto your choice of protein (chicken, fish, pork, beef) or vegetables. Ensure even coverage.
- Place the seasoned food in a bowl or a resealable bag and marinate in the refrigerator for at least 2 hours. For deeper flavor, marinate overnight or for up to 24 hours.
