Ingredients
  

  • 2 pieces chicken breasts boneless
  • 1/2 cup asparagus blanched and chopped
  • 2 cloves garlic minced
  • 1/2 cup mozzarella cheese shredded
  • 1/2 tsp salt
  • 1/4 tsp black pepper ground
  • 1 tbsp olive oil

Instructions
 

  • Preheat oven to 375°F (190°C). Lightly grease a baking dish or prepare an oven-safe skillet.
  • Blanch asparagus: Bring a small pot of salted water to a boil. Add asparagus and cook for 2-3 minutes until tender-crisp. Drain and immediately plunge into ice water to stop cooking. Chop into small pieces.
  • Prepare stuffing: In a bowl, combine the chopped blanched asparagus, minced garlic, shredded mozzarella cheese, salt, and pepper. Mix well.
  • Prepare chicken: Lay each chicken breast flat on a cutting board. Using a sharp knife, carefully make a horizontal slit into the thickest part of each breast, creating a pocket, being careful not to cut all the way through.
  • Stuff chicken: Divide the asparagus-mozzarella mixture evenly and stuff it into the pockets of each chicken breast. Secure the opening with toothpicks if needed.
  • Sear (optional for extra flavor): Heat olive oil in an oven-safe skillet over medium-high heat. Sear chicken breasts for 2-3 minutes per side until golden brown.
  • Bake: Transfer the skillet (or place chicken in the prepared baking dish) to the preheated oven. Bake for 20-25 minutes, or until chicken is cooked through and the internal temperature reaches 165°F (74°C).
  • Serve: Remove from oven, let rest for a few minutes, then serve immediately with your favorite side dishes.

Notes

For extra flavor, add a slice of prosciutto or sundried tomato to the filling. Serve with a side of roasted vegetables or a light salad. Ensure chicken reaches an internal temperature of 165°F (74°C) for food safety. You can skip searing and go straight to baking if you prefer.
