Ingredients
  

  • 8 oz spaghetti or linguine dry
  • 3 cloves garlic minced
  • 2 tbsp olive oil extra virgin
  • 1/2 tsp red pepper flakes optional
  • 1/4 cup Parmesan cheese grated
  • 2 tbsp fresh parsley chopped
  • 1/4 cup pasta water reserved

Instructions
 

  • Bring a large pot of salted water to a rolling boil. Add pasta and cook according to package directions until al dente.
  • While pasta cooks, heat olive oil in a large skillet over medium heat. Add minced garlic and red pepper flakes (if using) and sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.
  • Before draining, reserve about 1/2 cup of pasta water. Drain the pasta and immediately transfer it to the skillet with the garlic and oil.
  • Add reserved pasta water, grated Parmesan cheese, chopped fresh parsley, salt, and black pepper to the skillet. Toss everything together until the pasta is well coated and the sauce slightly thickens.
  • Serve hot, garnished with extra Parmesan and parsley if desired.

Notes

For best results, use a high-quality stainless steel pot for boiling pasta and a sturdy skillet for the sauce. Feel free to add cherry tomatoes, spinach, or grilled chicken for extra flavor and nutrients. Adjust garlic and chili flakes to your taste. Garnish with fresh parsley or basil.
