Ingredients
  

  • 1.5 lb boneless skinless chicken breast
  • 2 cups broccoli florets
  • 1 cup bell pepper any color
  • 1 cup sweet potato peeled and diced into 1/2-inch cubes
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 tsp paprika
  • 0.25 tsp black pepper
  • 0.5 tsp salt

Instructions
 

  • In a large bowl, combine the chicken cubes, broccoli florets, chopped bell pepper, and diced sweet potato.
  • Drizzle with olive oil and sprinkle with garlic powder, onion powder, paprika, salt, and black pepper. Toss well to ensure all ingredients are evenly coated.
  • Preheat your air fryer to 375°F (190°C) for 5 minutes.
  • Place half of the seasoned chicken and vegetables in a single layer in the air fryer basket. Avoid overcrowding to ensure even cooking and crispiness.
  • Cook for 10 minutes, then shake the basket or toss the ingredients. Continue cooking for another 8-10 minutes, or until the chicken is cooked through (internal temperature of 165°F / 74°C) and the vegetables are tender-crisp.
  • Remove the first batch and repeat with the remaining chicken and vegetables.
  • Divide the cooked chicken and vegetables into meal prep containers. Enjoy immediately or store for later.

Notes

For variety, try different vegetables like zucchini, cherry tomatoes, or asparagus. You can also swap chicken for shrimp or firm tofu. Store individual portions in airtight containers in the fridge for up to 4 days. Reheat in the microwave or air fryer.
