Ingredients
  

  • 1 tbsp olive oil
  • 1 cup onion chopped
  • 2 cloves garlic minced
  • 2 stalks celery chopped
  • 2 carrots diced
  • 1 cup red lentils rinsed
  • 6 cups vegetable broth
  • 1 can diced tomatoes 14.5 oz
  • 1 tsp cumin
  • 0.5 tsp turmeric
  • 0.25 tsp black pepper
  • 0.5 tsp salt or to taste
  • 2 tbsp fresh parsley chopped

Instructions
 

  • Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, garlic, celery, and carrots. Cook until softened, about 5-7 minutes.
  • Stir in the rinsed lentils, vegetable broth, diced tomatoes, cumin, turmeric, salt, and pepper. Bring to a boil.
  • Reduce heat to low, cover, and simmer for 30-40 minutes, or until lentils are tender and soup has thickened. Stir occasionally to prevent sticking.
  • Taste and adjust seasoning if necessary.
  • Ladle into bowls and garnish with fresh chopped parsley. Serve hot.

Notes

For a vegetarian option, omit the chicken broth and use vegetable broth. Add a squeeze of lemon juice before serving for a brighter flavor. Serve with crusty bread.
