Ingredients
- 1.5 lb boneless skinless chicken breasts
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 1 tbsp dried oregano
- 1 tsp garlic powder
- 0.5 tsp salt
- 0.25 tsp black pepper
- 8-10 wooden or metal skewers
- 1 cup plain Greek yogurt
- 0.5 cup cucumber grated and squeezed dry
- 1 clove garlic minced
- 1 tbsp fresh dill chopped (or 1 tsp dried)
- 1 tbsp olive oil
- 1 tsp white wine vinegar
- 0.25 tsp salt
- 1 cup romaine lettuce chopped
- 0.5 cup cherry tomatoes halved
- 0.25 cup cucumber diced
- 0.25 cup red onion thinly sliced
- 0.25 cup Kalamata olives pitted
- 2 tbsp feta cheese crumbled
- 2 tbsp Greek vinaigrette
Instructions
- 1. **Prepare Chicken:** In a bowl, combine chicken cubes with olive oil, lemon juice, oregano, garlic powder, salt, and pepper. Mix well and let marinate for at least 30 minutes, or up to 4 hours in the refrigerator. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. 2. **Make Tzatziki:** In a small bowl, combine Greek yogurt, grated cucumber (squeezed dry), minced garlic, fresh dill, olive oil, white wine vinegar, salt, and pepper. Stir well and refrigerate until ready to serve. 3. **Assemble Skewers:** Thread marinated chicken pieces onto the prepared skewers. 4. **Grill Chicken:** Preheat a grill or grill pan to medium-high heat. Lightly oil the grates. Grill the chicken skewers for 3-4 minutes per side, or until cooked through and lightly charred. 5. **Prepare Salad:** In a large bowl, combine chopped romaine lettuce, cherry tomatoes, diced cucumber, red onion, and Kalamata olives. Notes
For a vegetarian option, marinate tempeh chunks in place of chicken. Grilled tuna is another great alternative for a lighter protein. Serve with red rice, white rice, or steamed vegetables for a complete meal.
