Ingredients
  

  • 250 g spaghetti or your favorite pasta
  • 2 tbsp olive oil
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 1 can (400g) crushed tomatoes
  • 0.5 cup vegetable broth
  • 0.25 cup fresh basil chopped (optional)
  • 0.25 cup Parmesan cheese grated (for serving)
  • to taste salt
  • to taste black pepper

Instructions
 

  • Cook pasta according to package directions until al dente. Drain, reserving about 1/2 cup of pasta water.
  • While pasta cooks, heat olive oil in a large skillet or pot over medium heat. Add onion and cook until softened, about 5-7 minutes.
  • Add minced garlic and cook for another minute until fragrant.
  • Pour in crushed tomatoes and vegetable broth. Bring to a simmer, then reduce heat and let it cook for 10-15 minutes, allowing flavors to meld. Season with salt and pepper to taste.
  • Add the cooked pasta to the sauce. If the sauce is too thick, add a splash of reserved pasta water until it reaches your desired consistency.
  • Stir in fresh basil (if using).
  • Serve hot, garnished with grated Parmesan cheese.

Notes

This recipe is highly adaptable. Feel free to add grilled chicken, shrimp, or your favorite sautéed vegetables. Experiment with different sauces like a creamy Alfredo, a vibrant pesto, or a spicy arrabiata for a fresh twist! Garnish with fresh herbs or a sprinkle of chili flakes.
