Ingredients
  

  • 2 tbsp olive oil
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 8 oz cremini mushrooms sliced
  • 1 can (28 oz) crushed tomatoes
  • 2 tbsp tomato paste
  • 0.5 cup vegetable broth
  • 0.25 cup Parmesan cheese grated
  • 0.5 tsp dried oregano

Instructions
 

  • Heat olive oil in a large skillet over medium heat.
  • Add chopped onion and cook until softened, about 5-7 minutes.
  • Stir in minced garlic and cook for another minute until fragrant.
  • Add sliced mushrooms and cook until they release their liquid and start to brown, about 8-10 minutes.
  • Stir in tomato paste and cook for 2 minutes, stirring constantly.
  • Pour in crushed tomatoes and vegetable broth. Add dried oregano. Bring to a simmer.
  • Reduce heat to low, cover, and let it simmer for 15-20 minutes, stirring occasionally, until the sauce thickens.

  • Season with salt and black pepper to taste.

Notes
