Ingredients
  

  • 1.5 cups all-purpose flour
  • 0.75 cup warm water
  • 1 tablespoon vegetable oil plus more for cooking
  • 0.5 teaspoon salt for chapati
  • 4 large eggs
  • 0.5 medium onion finely chopped
  • 0.5 medium tomato finely chopped
  • 2 tablespoons fresh cilantro chopped (optional)
  • 0.5 teaspoon salt for eggs
  • 0.25 teaspoon black pepper for eggs

Instructions
 

  • Prepare Chapati Dough: In a large bowl, combine the all-purpose flour and 0.5 teaspoon salt. Gradually add warm water and 1 tablespoon oil, mixing until a shaggy dough forms. Knead on a lightly floured surface for 5-7 minutes until the dough is smooth and elastic. Cover the dough with a damp cloth and let it rest for 15 minutes.
  • Cook Chapatis: Divide the rested dough into two equal balls. On a lightly floured surface, roll each ball into a thin, round flatbread (about 8-10 inches in diameter). Heat a lightly oiled non-stick pan or griddle over medium heat. Cook each chapati for 1-2 minutes per side until lightly browned and puffed. Set aside and keep warm.
  • Prepare Egg Mixture: In a separate bowl, whisk the large eggs. Stir in the finely chopped onion, tomato, cilantro (if using), 0.5 teaspoon salt, and 0.25 teaspoon black pepper. Mix well to combine.
  • Assemble and Cook Rolex: Place one cooked chapati back into the same pan (or another lightly oiled pan) over medium heat. Pour half of the egg mixture over the chapati, spreading it evenly to cover the surface. Cook for 1-2 minutes, or until the egg is mostly set but still slightly moist.
  • Roll the Rolex: Gently and tightly roll the chapati with the egg from one side to the other, forming a wrap. Remove from the pan and place on a serving plate.
  • Serve: Repeat the process with the remaining chapati and egg mixture. Serve your homemade Ugandan Rolex immediately, perhaps with a dash of your favorite hot sauce or chili flakes.

Notes

For variations, you can add shredded cabbage, grated carrots, or a pinch of curry powder to the egg mixture. Serve with a side of kachumbari (fresh tomato and onion salad) or your favorite hot sauce. To make it a bit richer, spread a thin layer of butter or avocado on the chapati before adding the egg.
