Ingredients

  • 8 oz egg noodles cooked al dente
  • 4 cloves garlic minced
  • 1 tbsp fresh ginger grated
  • 2 tbsp soy sauce low sodium
  • 1 tbsp oyster sauce optional
  • 1 tbsp rice vinegar
  • 1 tsp chili flakes or to taste
  • 0.5 tsp sugar
  • 2 tbsp water
  • 2 tbsp sesame oil
  • 2 tbsp scallions chopped

Instructions

  • Cook egg noodles according to package directions until al dente. Drain thoroughly and set aside.
  • In a small bowl, whisk together the soy sauce, oyster sauce (if using), rice vinegar, chili flakes, sugar, and water. Mix until sugar is dissolved.
  • Heat sesame oil in a large pan or wok over medium heat. Add the minced garlic and grated ginger, then sauté for about 1 minute until fragrant, being careful not to burn the garlic.
  • Add the cooked noodles to the pan. Pour the prepared sauce mixture over the noodles.
  • Toss everything together continuously for 2-3 minutes, ensuring the noodles are evenly coated and heated through.
  • Serve immediately, garnished with chopped scallions.

Notes

For an extra protein boost, add cooked shrimp, chicken, or tofu to the noodles. Adjust the amount of chili flakes to suit your preferred spice level. Garnish with sesame seeds for added texture and flavor.
