Ingredients
- 1 kg chicken cut into pieces
- 1 cup plain yogurt full-fat
- 2 tbsp ginger garlic paste
- 1 tbsp lemon juice
- 1 tsp red chili powder
- 1 tsp turmeric powder
- 1 tsp garam masala
- 1 tsp cumin powder
- 0.5 tsp coriander powder
- 1 tsp salt or to taste
- 1 tbsp oil
- few drops red food coloring optional
Instructions
- Make two deep cuts on each chicken piece. In a large bowl, combine yogurt, ginger garlic paste, lemon juice, red chili powder, turmeric powder, garam masala, cumin powder, coriander powder, salt, oil, and food coloring (if using).
- Add the chicken pieces to the marinade, ensuring they are fully coated. Cover the bowl and refrigerate for at least 4 hours, or overnight for best flavor.
- Preheat your oven to 200°C (400°F) or prepare your grill for medium-high heat. If using skewers, thread the chicken pieces onto them.
- Bake or grill the chicken for 25-30 minutes, turning occasionally, until cooked through and slightly charred. Brush with a little oil or butter halfway through cooking for extra moisture and flavor.
- Serve hot with a squeeze of fresh lemon juice, sliced onions, and cilantro.
Notes
For best results, marinate the chicken for at least 4 hours, or preferably overnight. If you don't have a tandoor, you can use a hot oven, grill, or air fryer. Serve with naan bread, rice, and a refreshing raita.
