Ingredients
  

  • 4 cups filtered water
  • 0.5 cup apple cider vinegar raw and unfiltered
  • 0.25 cup maple syrup or molasses
  • 2 inches fresh ginger peeled and thinly sliced or grated

Instructions
 

  • In a large pitcher, combine the filtered water, apple cider vinegar, and maple syrup (or molasses). Stir well until the sweetener is fully dissolved.
  • Add the peeled and sliced or grated fresh ginger to the mixture.
  • Stir again to combine all ingredients thoroughly.
  • Cover the pitcher and refrigerate for at least 1-2 hours, or preferably overnight, to allow the flavors to meld and the ginger to infuse. The longer it sits, the stronger the ginger flavor will be.
  • Before serving, strain out the ginger pieces using a fine-mesh sieve. Serve chilled over ice.

Notes

For best flavor, let the Switchel chill for at least an hour before serving, or even overnight. You can adjust the amount of sweetener and ginger to your taste. For an extra fizzy kick, substitute sparkling water for some or all of the still water. A slice of lemon or lime makes a great garnish.
