- 4 cups cold water
- 1/2 cup apple cider vinegar unfiltered (like Bragg's)
- 2 inch fresh ginger peeled and finely grated
- 1/4 - 1/2 cup maple syrup or molasses

- 1. Peel and finely grate the fresh ginger. You can also thinly slice it if you prefer a milder ginger flavor and easier straining.
- 2. In a large pitcher or jar, combine the cold water, apple cider vinegar, and grated ginger.
- 3. Add 1/4 cup of your chosen sweetener (maple syrup, molasses, or honey). Stir well until the sweetener is fully dissolved.
- 4. Taste the switchel and adjust the sweetness if desired, adding more sweetener up to 1/2 cup total.
- 5. Cover the pitcher and refrigerate for at least 1 hour to allow the flavors to meld. For a more intense ginger flavor, let it steep overnight.
- 6. Before serving, you can strain the switchel through a fine-mesh sieve to remove the ginger pulp, or leave it in for a rustic feel and stronger ginger kick.
