Ingredients
  

  • 4 cup water
  • 2 inch fresh ginger peeled and thinly sliced or grated
  • 1/2 cup apple cider vinegar unfiltered
  • 1/4 cup maple syrup or molasses (adjust to taste)

Instructions
 

  • In a medium saucepan, combine water and ginger. Bring to a gentle simmer over medium heat.
  • Remove from heat and let the ginger steep for 15-20 minutes to infuse its flavor. For a stronger ginger flavor, steep longer or lightly crush the ginger before simmering.
  • Strain the ginger from the liquid using a fine-mesh sieve and discard the ginger solids. Let the liquid cool slightly.
  • Stir in the apple cider vinegar and maple syrup (or molasses) until well combined. Taste and adjust sweetener if desired.
  • Pour the Switchel into a glass pitcher or jar. Chill thoroughly in the refrigerator for at least 2 hours before serving.
  • Serve cold over ice. You can garnish with a lemon slice or a sprig of mint.

Notes

For extra zing, lightly crush the ginger before simmering. Adjust sweetener to taste. Serve well-chilled, and consider adding a splash of sparkling water for a fizzy kick. Store in the refrigerator for up to a week.
