These Grilled Peach, Halloumi & Prosciutto Skewers combine sweet, salty, and savory flavors in a quick and easy appetizer or light meal, perfect for summer grilling.
Ingredients
- 2 medium firm ripe peaches pitted and cut into 8 wedges each
- 8 oz halloumi cheese cut into 1-inch cubes
- 6 slices prosciutto folded in half or thirds
- 2 tbsp hot honey plus more for drizzling
- 1/4 cup pistachios chopped
- 1 tbsp olive oil for grilling
- 8 count wooden or metal skewers
Instructions
- If using wooden skewers, soak them in water for at least 30 minutes. Preheat your grill or grill pan to medium-high heat.
- Thread the peach wedges, halloumi cubes, and folded prosciutto slices onto the skewers, alternating the ingredients for even cooking and flavor distribution.
- Lightly brush the assembled skewers with olive oil.
- Place the skewers on the hot grill. Grill for 2-3 minutes per side, or until the peaches are slightly softened and have nice char marks, and the halloumi is golden brown and tender. The prosciutto should become slightly crispy.
- Remove the skewers from the grill and arrange them on a serving platter. Drizzle generously with hot honey and sprinkle with chopped pistachios.
