Ingredients
  

  • 1 can chickpeas drained and rinsed
  • 0.5 cup cucumber diced
  • 0.5 cup cherry tomatoes halved
  • 0.25 cup red onion thinly sliced
  • 2 tbsp fresh parsley chopped
  • 1 tbsp fresh mint chopped
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp sumac
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Instructions
 

  • In a large bowl, combine drained chickpeas, diced cucumber, halved cherry tomatoes, thinly sliced red onion, chopped parsley, and chopped mint.
  • In a small bowl, whisk together olive oil, lemon juice, sumac, salt, and black pepper.
  • Pour the dressing over the salad ingredients and toss gently to combine.
  • Taste and adjust seasoning if needed. Serve immediately or chill for later.

Notes

For best flavor, let the salad sit for at least 30 minutes before serving. Adjust sumac to your taste, adding more for a tangier profile. This salad is great with grilled meats or pita bread.
