Ingredients
- 1 lb shrimp peeled and deveined
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp sesame oil
- 2 tsp cornstarch
- 1 tsp chili flakes or to taste
- 4 cloves garlic minced
- 1 inch ginger grated
- 1 tbsp vegetable oil
- 1 cup broccoli florets
- 1/2 cup sliced carrots
- 1/2 cup bell pepper sliced (any color)
- 1/4 cup green onions chopped
Instructions
- In a bowl, combine soy sauce, rice vinegar, sesame oil, cornstarch, and chili flakes. Add shrimp and toss to coat. Let marinate for 10 minutes.
- Heat vegetable oil in a large skillet or wok over medium-high heat. Add minced garlic and grated ginger, stir-fry for 30 seconds until fragrant.
- Add broccoli florets and sliced carrots to the wok. Stir-fry for 3-4 minutes until slightly tender-crisp.
- Add sliced bell pepper and marinated shrimp to the wok. Stir-fry for another 3-5 minutes, or until shrimp turn pink and opaque, and vegetables are tender-crisp.
- Pour any remaining marinade from the shrimp over the stir-fry and cook for another minute, allowing the sauce to thicken slightly.
- Remove from heat. Garnish with chopped green onions and serve immediately over steamed rice or noodles.
Notes
For extra spice, add more chili flakes or a dash of sriracha. Serve over rice, noodles, or quinoa. Feel free to substitute shrimp with chicken or tofu for a different protein. Add your favorite stir-fry vegetables like broccoli, snow peas, or bell peppers.
