Spicy Salmon Crispy Rice

Ingredients
- 1.5 cup short-grain sushi rice
- 2 cup water
- 2 tbsp rice vinegar unseasoned
- 1 tsp sugar
- 0.5 tsp salt
- 1 lb skinless salmon fillet diced into small cubes
- 0.25 cup mayonnaise Japanese preferred
- 1-2 tbsp sriracha to taste
- 1 tsp soy sauce
- 0.5 tsp sesame oil
- 2 tbsp green onions chopped
- 1 medium avocado sliced or diced
- 2 sheets nori cut into strips or small squares
- 1 tsp sesame seeds for garnish
- 2 tbsp oil neutral
Instructions
- Rinse sushi rice thoroughly until water runs clear. Combine rice and 2 cups water in an Instant Pot. Cook on high pressure for 5 minutes, then allow natural release for 10 minutes before quick releasing any remaining pressure.
- Once cooked, transfer the hot rice to a large bowl. In a small bowl, whisk together rice vinegar, sugar, and salt until dissolved. Pour over the rice and gently fold with a rice paddle or spatula until fully incorporated. Allow the rice to cool completely, about 30-45 minutes.
- Once cooled, lightly wet your hands. Take about 2 tablespoons of rice and form it into small rectangular or round patties, about 1/2 inch thick. Press firmly to ensure they hold shape. Repeat with remaining rice.
- Preheat your air fryer to 375°F (190°C). Lightly brush or spray the rice patties with neutral oil. Arrange them in a single layer in the air fryer basket, ensuring not to overcrowd. Air fry for 10-15 minutes, flipping halfway, until golden brown and crispy. Cook in batches if necessary.
- While the rice is air frying, combine diced salmon, mayonnaise, sriracha (start with 1 tablespoon and add more if desired), soy sauce, sesame oil, and chopped green onions in a bowl. Mix gently until the salmon is evenly coated.
- Once the crispy rice is ready, carefully place a spoonful of the spicy salmon mixture on top of each rice patty. Garnish with sliced or diced avocado, nori strips, and a sprinkle of sesame seeds. Serve immediately and enjoy!
Notes
For extra spice, add a dash of sriracha to the salmon mixture. Garnish with sesame seeds, green onions, or a drizzle of eel sauce. The crispy rice can also be pan-fried if you don't have an air fryer, though it might take a bit longer to achieve the same crispiness.
