Spicy Korean Chicken Stir-Fry
A vibrant and fiery Korean chicken stir-fry featuring tender chicken thighs coated in a rich, spicy gochujang-based sauce, balanced with sweet honey and savory soy. Perfect for a quick and flavorful weeknight meal.
Ingredients
- 1 lb boneless chicken thighs diced
- 2 tbsp soy sauce
- 1 tbsp honey
- 1 tbsp gochujang Korean chili paste
- 2 cloves garlic minced
- 1 tsp ginger grated
- 1 tbsp sesame oil
- 1 tsp sesame seeds for garnish
- 2 green onions sliced for garnish
- to taste pinch salt and black pepper
- 1 tbsp rice vinegar optional
Instructions
- In a bowl, whisk together soy sauce, honey, gochujang, minced garlic, grated ginger, and optional rice vinegar to create the marinade.
- Add the diced chicken thighs to the marinade, ensuring all pieces are well coated. Marinate for at least 15 minutes, or up to 30 minutes for deeper flavor.
- Heat sesame oil in a large skillet or wok over medium-high heat.
- Add the marinated chicken to the hot skillet, spreading it in a single layer if possible. Cook for 5-7 minutes, stirring occasionally, until chicken is browned and cooked through.
- If desired, add any vegetables like bell peppers or broccoli and cook for another 3-5 minutes until tender-crisp.
- Garnish with sesame seeds and sliced green onions before serving.
- Serve immediately with steamed rice.
Notes
Serve with steamed rice and a side of quick kimchi or a simple cucumber salad. For extra heat, add a pinch of Korean chili flakes. Vegetables like bell peppers, broccoli, or snap peas can be added during cooking for a more complete meal. Ensure chicken is cooked through before serving.
