Spicy Korean Braised Tofu
Dubu Jorim is an authentic Korean dish featuring pan-fried tofu simmered in a savory, spicy soy-based sauce. It's a popular and healthy staple in Korean cuisine.
Ingredients
- 1 block extra-firm tofu (14-16 oz)
- 4 tbsp soy sauce
- 2 tbsp gochugaru (Korean chili flakes
- 3 cloves garlic minced
- 1 tbsp sesame oil
- 1 tbsp sugar
- 1 tbsp mirin (or rice wine
- 0.5 cup water or vegetable broth
- 2 stalks green onions chopped (for garnish)
- 1 tsp sesame seeds (for garnish)
- 2 tbsp cooking oil (for frying tofu)
Instructions
- Slice the tofu into 1/2-inch thick rectangular pieces. Pat them thoroughly dry with paper towels to remove excess moisture.
- Heat cooking oil in a non-stick pan over medium-high heat. Fry the tofu slices for 3-4 minutes per side, until golden brown and slightly crispy. Remove from pan and set aside.
- In a small bowl, whisk together soy sauce, gochugaru, minced garlic, sesame oil, sugar, mirin (if using), and water or vegetable broth to create the braising sauce.
- Arrange the fried tofu slices back into the pan. Pour the prepared sauce evenly over the tofu.
- Bring the sauce to a simmer over medium heat. Reduce heat to low, cover, and let it braise for 10-15 minutes, or until the sauce has thickened and the tofu has absorbed the flavors.
- Uncover, gently flip the tofu, and continue to simmer for another 5 minutes, or until the sauce is reduced to your desired consistency.
- Garnish with chopped green onions and sesame seeds before serving. Serve immediately with warm rice.
Notes
For firmer tofu, press it between paper towels with a heavy object for 30 minutes before frying. Adjust gochugaru to your desired spice level. Serve hot with steamed rice and other banchan (side dishes). A drizzle of extra sesame oil before serving adds a lovely aroma.
