  • 2 medium salmon fillets skin-on or off
  • 2 tablespoons harissa paste mild or hot
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 2 tablespoons olive oil divided
  • 2 cloves garlic minced
  • 1 small shallot thinly sliced
  • 1 tablespoon fresh parsley chopped (for garnish

Instructions
 

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
  • In a small bowl, combine the harissa paste, honey, ground cumin, smoked paprika, and salt. Mix well to form a smooth paste.
  • Pat the salmon fillets dry with paper towels. This helps the rub adhere better and ensures crispy skin if left on. Brush or spread the harissa-honey mixture evenly over the top and sides of the salmon fillets.
  • In a small, oven-safe skillet or directly on the prepared baking sheet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sliced shallot and sauté for 1-2 minutes until fragrant and slightly softened. Remove from heat.
