Spicy Harissa Chicken Recipe

Ingredients
- 1 lb boneless skinless chicken breasts
- 2 tbsp harissa paste adjust to spice preference
- 1 tbsp olive oil
- 1 tsp smoked paprika optional
- 0.5 tsp cumin optional
- 0.25 tsp salt
- 0.25 tsp black pepper
- 2 cups mixed vegetables such as bell peppers
- 0.5 cup plain Greek yogurt
- 1 tbsp fresh lemon juice
- 0.5 tsp lemon zest
- 1 clove garlic minced
- 0.25 cup fresh cilantro chopped
- 0.25 cup fresh parsley chopped
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, combine chicken pieces with harissa paste, olive oil, smoked paprika, cumin, salt, and pepper. Toss to coat evenly.
- Add the chopped mixed vegetables to the bowl with the chicken and toss again to combine.
- Spread the chicken and vegetables in a single layer on the prepared baking sheet.
- Roast for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender-crisp.
- While the chicken is roasting, prepare the lemon yogurt. In a small bowl, whisk together Greek yogurt, fresh lemon juice, lemon zest, and minced garlic.
- Once cooked, remove the chicken and vegetables from the oven.
- Serve the spicy harissa chicken immediately, topped with a generous dollop of the lemon yogurt and garnished with fresh cilantro and parsley.
Notes
Adjust harissa spice level to your preference. Serve with couscous, rice, or a side salad for a complete meal. Leftovers are excellent for lunch the next day. Consider adding chickpeas to the roasting pan for extra protein and fiber.
