Ingredients
  

  • 1 lb boneless skinless chicken breast
  • 1 large bell pepper sliced (any color)
  • 3 stalks green onions chopped
  • 3 cloves garlic minced
  • 1 cup cherry tomatoes halved
  • 3 tbsp Gochujang Korean chili paste
  • 1 tsp hot sauce such as Sriracha (optional)
  • 1 tbsp low-sodium soy sauce
  • 1 tsp honey or brown sugar
  • 2 tbsp water or chicken broth
  • 1 tbsp light cooking oil such as vegetable or canola

Instructions
 

  • 1. In a small bowl, whisk together Gochujang, hot sauce (if using), soy sauce, honey, and water or chicken broth to create the sauce. Set aside.
  • 2. Heat light cooking oil in a large skillet or wok over medium-high heat. Add the thinly sliced chicken breast and cook for 3-5 minutes until browned and cooked through. Remove chicken from the skillet and set aside.
  • 3. Add the sliced bell pepper and minced garlic to the skillet. Sauté for 3-4 minutes until the bell pepper is tender-crisp and the garlic is fragrant.
  • 4. Return the cooked chicken to the skillet. Add the halved cherry tomatoes and half of the chopped green onions.
  • 5. Pour the prepared Gochujang sauce over the chicken and vegetables. Toss to coat everything evenly. Cook for 1-2 minutes, allowing the sauce to thicken slightly and flavors to meld.
  • 6. Remove from heat, garnish with the remaining green onions, and serve immediately.

Notes

Serve this spicy chicken over steamed rice or noodles for a complete meal. For an extra layer of flavor, you can add a drizzle of sesame oil at the end. Adjust the amount of Gochujang and hot sauce to control the spice level. Feel free to add other vegetables like broccoli florets, snap peas, or sliced mushrooms for added nutrition and texture.
