Ingredients
  

  • 1 cup cooked short-grain rice
  • 200g ground beef or desired protein
  • 1 tbsp tbsp soy sauce
  • 1 tsp tsp minced garlic
  • 1 tsp tsp sesame oil
  • 1/2 tsp sugar
  • 2 cups fresh spinach
  • 1 medium carrot julienned
  • 1 medium zucchini julienned
  • 4 fresh shiitake mushrooms sliced
  • 1 cup fresh bean sprouts
  • 4 large eggs
  • 2 tbsp tbsp Gochujang (Korean chili paste)
  • 1 tbsp tbsp sesame oil for sauce
  • 1 tbsp tbsp rice vinegar for sauce
  • 1 tsp tsp sugar for sauce
  • 1 tsp tsp sesame seeds for garnish

Instructions
 

  • Prepare the rice: Cook 1 cup of short-grain rice according to package instructions.
  • Prepare the beef: In a bowl, combine ground beef, 1 tbsp soy sauce, 1 tsp minced garlic, 1 tsp sesame oil, and 1/2 tsp sugar. Marinate for 10 minutes. Cook in a pan over medium heat until browned.
  • Prepare the vegetables: Blanch spinach and bean sprouts separately, then drain and season with a pinch of salt and sesame oil. Sauté julienned carrots, zucchini, and sliced mushrooms separately in a bit of oil until tender-crisp. Season lightly with salt.
  • Make the Gochujang sauce: In a small bowl, whisk together Gochujang, 1 tbsp sesame oil, rice vinegar, and 1 tsp sugar.
  • Fry the eggs: Fry 4 eggs sunny-side up or to your preferred doneness.
  • Assemble the Bibimbap: Divide the cooked rice into 4 serving bowls. Arrange the cooked beef, all the seasoned vegetables, and a fried egg on top of each bowl. Add a generous dollop of the Gochujang sauce in the center of each. Garnish with sesame seeds.
  • Serve: Serve immediately. Before eating, mix all the ingredients thoroughly with a spoon to combine the flavors.

Notes

Feel free to customize your Bibimbap with your favorite vegetables or protein. Tofu or chicken can replace beef. Adjust the amount of Gochujang to your preferred spice level. A drizzle of sesame oil just before serving adds a wonderful nutty aroma.
