Spicy Beef Udon Stir-Fry
A vibrant and robust Japanese-inspired dish featuring tender slices of beef wok-tossed with thick, chewy udon noodles and crisp vegetables in a savory, spicy sauce.
Ingredients
- 200 g udon noodles cooked according to package directions
- 300 g beef sirloin or flank steak thinly sliced
- 1 tbsp soy sauce for beef marinade
- 1 tsp cornstarch for beef marinade
- 1 tbsp sesame oil divided
- 2 cloves garlic minced
- 1 inch ginger grated
- 0.5 cup onion sliced
- 1 cup carrots julienned
- 1 cup bok choy chopped
- 0.25 cup chicken broth
- 2 tbsp soy sauce for sauce
- 1 tbsp oyster sauce
- 1 tbsp chili garlic sauce or to taste
- 1 tsp sugar
- 1 tbsp cornstarch for sauce slurry
- 2 tbsp water for cornstarch slurry
- 2 tbsp green onions chopped
- 1 tsp sesame seeds for garnish
Instructions
- Cook udon noodles according to package directions. Drain and set aside.
- In a bowl, combine thinly sliced beef with 1 tbsp soy sauce and 1 tsp cornstarch. Mix well and set aside.
- In a small bowl, whisk together chicken broth, 2 tbsp soy sauce, oyster sauce, chili garlic sauce, and sugar to make the sauce.
- In another small bowl, mix 1 tbsp cornstarch with 2 tbsp water to create a slurry.
- Heat 1 tbsp sesame oil in a large skillet or wok over medium-high heat. Add the marinated beef and stir-fry until browned and cooked through, about 3-4 minutes. Remove beef from the wok and set aside.
- Add the remaining 1 tbsp sesame oil to the wok. Add minced garlic, grated ginger, and sliced onion. Stir-fry for 1 minute until fragrant.
- Add julienned carrots and chopped bok choy. Stir-fry for 2-3 minutes until vegetables are crisp-tender.
- Return the cooked beef to the wok. Add the cooked udon noodles.
- Pour the prepared sauce mixture over the noodles and beef. Toss to coat everything evenly.
- Stir the cornstarch slurry once more and pour into the wok. Cook, stirring constantly, until the sauce thickens, about 1-2 minutes.
- Remove from heat. Garnish with chopped green onions and sesame seeds. Serve immediately.
Notes
Adjust chili garlic sauce to your spice preference. Add extra vegetables like broccoli or bell peppers for more variety. For extra flavor, marinate the beef for 15-20 minutes before cooking.
